Orange Glazed Parsnips Recipe

This orange glazed parsnip recipe is not only low fat, it's cholesterol free as well!

Ingredients

    • 1/2 lb parsnips
    • 2 tsp vegetable oil
    • 1/8 tsp salt
    • 6 tbsp orange juice

Preparation

    • Peel parsnips and slice about 3/8-inch thick. If parsnips are large, cut slices in half.
    • In a frying pan, heat oil over medium heat and add parsnips. Saute for 8 to 10 minutes, stirring and turning pieces over so that both sides brown. If they brown too quickly, lower the heat.
    • When the parsnips are almost done, add salt and orange juice and cook. Continuing to turn pieces until almost all the juice has evaporated.
